Chocolate Cake

This is a recipe that has been made in my family for years. We call it "Wacky Cake." I was delighted when I realized that I'd still be able to make it after we became vegan. It's a nice, moist chocolate cake. The vinegar and baking soda help it rise.

3 c flour
2 c sugar
4 T cocoa
2 t baking soda
1 t salt
10 T vegetable oil
2 c water
2 T vinegar
1 t vanilla

Combine dry ingredients. Add wet ingredients and mix well. Pour into two greased and floured nine inch cake pans. Bake 45 minutes at 350°. Many commercial frostings are vegan, so just check the ingredients to find one for this cake. Also, we've had good luck with the frosting recipes we've found on the sides of cocoa cans.
