These are good chocolate chip cookies. The tofu makes them chewy. Chocolate chips often have dairy products in them, but vegan ones are not too hard to find. I just bought a bag of Wal-Mart's store brand, and we've gotten Ghirardelli and, I believe, Baker's brands before. Check the labels!
2 1/4 c flourCombine the flour, baking soda, and salt and set aside. Whip the tofu in a food processor until it is smooth. (To measure the tofu, I often put 1 1/2 c water in a two cup measuring cup and start adding chunks of tofu until the water level reaches two cups.) Cream together the shortening, margarine, sugars, tofu, and vanilla. Add the flour mixture and combine. Stir in the chocolate chips. Bake at 375° for nine to eleven minutes.
