Coffee Cake

This is anything but low fat. My father used to make the coffee cake recipe on the back of the Bisquick box, and it was really good. This is a fairly close approximation.

Streusel Topping:

3/4 c brown sugar
3/4 c flour
1/4 lb soy margarine

The margarine should be chilled, but not frozen. Combine the three ingredients until a uniform consistency is achieved. I usually have to use my hands, so it's a bit messy.

Cake:

1 c sugar
1 3/4 c flour
2 t baking powder
4 T soy margarine
1 1/2 t Egg Replacer (a powdered binding agent found at health food stores)
3/4 c soy milk

Combine all ingredients, mixing well (I usually use an electric hand mixer). Pour into a greased eight inch square cake pan. Distribute streusel topping evenly over the top. Bake 40 minutes at 375°.
