We used to love Jiffy brand cornbread mix, but this is much better, and we never would have discovered it if we hadn't become vegans! This goes great with chili or red beans and rice.
1.5 c soymilkGrease a 9 inch square baking pan and preheat oven to 425°. Combine the soymilk and the vinegar and set aside. Mix the dry ingredients in a mixing bowl. Add the soymilk mixture and stir until just blended. Pour into baking pan and bake for 25 to 30 minutes.
