Gravy

This is a pretty generic gravy for mashed potatoes and stuffing.

4 T soy margarine
4 T flour
salt and pepper to taste
2 c vegetable broth

Melt the margarine, then add the flour. Stir while cooking over medium heat until lightly browned (approx. 3 minutes). Add salt and pepper and blend. Stir in broth a little at a time to prevent lumping. Simmer for 10 minutes.
