Cream of Mushroom Soup

This is a recipe for cream of mushroom soup concentrate, like you would get out of a can. Add soymilk and heat it to have soup, or use it in your favorite recipes.

3 T soy margarine
3 T flour
.25 t salt
1 c soymilk
6-8 mushrooms, diced
1 small onion, diced

Sautee mushrooms and onion in margarine until softened. Blend in flour and salt, cooking and stirring until bubbly. While stirring, add the soymilk a little at a time to avoid lumping. Cook until it is thick and smooth.
