Often I'll read of a recipe in Vegetarian Times (to which my wife subscribes) and become excited because it's something I've been wanting. Many times, though, it turns out to be unlike what I was hoping for (sometimes they're just too healthy). This typically inspires me to create some less healthful/more tasty version of my own. This is an example.
2 1/2 c dried kidney beans (I believe this is roughly equivalent to five 15 oz. cans)Soak the beans according to the package. Combine all ingredients except the rice and simmer until beans are desired consistency (maybe an hour or more), adding water as needed to obtain desired thickness (I like it to be a thick, chili-like consistency). Fish out the bay leaf and serve over rice, with lots of Tabasco!.
