Scalloped Corn

This is a "new tradition" for Thanksgiving at our place. We'd never had it before, but we tried it one year, and it's stuck ever since. Give it a try!

6 T flour
2 t salt
1/2 t hot paprika
1/2 t dry mustard
1 T Egg Replacer
3 T soy margarine
1 onion, chopped
2 c soymilk
4 c corn (can be frozen)
1 1/3 c buttered (margarined?) bread crumbs

Mix first five ingredients in a small bowl. Melt the margarine and sautee the onion until softened. Stir in the flour mixture and cook for 3 minutes, stirring. Add the milk a little bit at a time to avoid lumping. Heat until it boils. Stir in corn and Egg Replacer. Transfer to a greased 1.5 qt casserole and top with crumbs. Bake at 375° for 45 minutes, or until bubbly.
