This is a good noodle recipe, of the kind my wife calls "comfort food." The noodles are sometimes hard to find; some brands of low-cholesterol noodles are egg-free (one such is Light and Fluffy brand macaroni dumplings; "macaroni" is a good hint that a pasta contains no eggs), and there are also mini-lasagne that have no eggs. Any pasta would do, really.
3 T soy margarineCook and drain the noodles according to the package. Saute the onions and mushrooms in the margarine until the onions become translucent. Combine all ingredients in a pot or a bowl.
