Stroganoff

This is a good noodle recipe, of the kind my wife calls "comfort food." The noodles are sometimes hard to find; some brands of low-cholesterol noodles are egg-free (one such is Light and Fluffy brand macaroni dumplings; "macaroni" is a good hint that a pasta contains no eggs), and there are also mini-lasagne that have no eggs. Any pasta would do, really.

3 T soy margarine
1 onion, chopped
12 to 16 oz. mushrooms, chopped
Salt to taste
Coarse ground pepper to taste
1/8 t nutmeg
1 12 oz package of Tofutti Sour Supreme (a sour cream substitute found at health food stores)
1/2 c soy milk
16 oz noodles

Cook and drain the noodles according to the package. Saute the onions and mushrooms in the margarine until the onions become translucent. Combine all ingredients in a pot or a bowl.
