Stuffing

This stuffing doesn't stuff anything, unless you count the casserole it's baked in. It tastes pretty good, though!

2 sticks soy margarine
1 onion, chopped
2 stalks celery, chopped
12 cups stale bread, torn into pieces
1 t ground pepper
1 1/2 t salt
1 T sage
1 1/4 c vegetable broth or water

We usually buy a loaf of generic white bread, tear it up, and leave it out overnight to get stale. Melt the margarine and sautee the onion and celery until softened. Stir in sage, salt, and pepper. Toss all ingredients together in a large bowl until well-mixed. Bake in a 2 quart casserole at 375° for 20 to 25 minutes, removing lid about halfway through.
